Combustion temps in the thousands doesn't lend it's self much to the formation of condensation. Cold cylinders with moisture in the air and open valves does.

Condensation formation in cylinders and the crank case has been happening LOOOOOOONG before ethanol regularly joined the party. Way back to the invention of the IC engine.

I would bet it's just coming from the dipstick or just general condesnation.........this is assuming you don't have coolant in the oil.

Can you check the fill cap for milky gunk, and maybe valve cover ports?

Has your area been very damp as of late... over weeks/months?

Do you have headers? maybe bad gasket? Have replaced many header gaskets because rain water leakin into engine.

Why did you back your truck so far out in the water? was it really at a low tide?It's a wonder you didn't get stuck. Just for the heck of it the next couple of times you use that ramp to don't back up as far and see if then you get water in your oil.
