I'll disagree with the guys that say ya can't cut ss with oxy/acet. It can be done. It'll look like poo-poo but you can cut it. You can cut it with a stick welding machine and a regular rod also, but you'll get the same result.

Your not cutting anything, your melting it. And I would imagine you have changed the composition of the SS where now welding it would be a real PITA

stainless can and is welded with Oxy, I have done it heaps of time and so do professional fabricators, it need to be 'pickled" after welding, which i think is some sort of acid bath, to make it shiny again after heating to weld, stainless is also very easy to weld with a stick welder but not in thin gauge, oxy does NOT cut too well it is just a "melt as mentioned earlier.
