I'm new too, I hope this helps some.
The engine needs good compression, ignition at the right time, and the right amount of fuel to run properly. Try isolating one of these 3 to begin with.
A compression test should give you around 115 psi +/- 20 % on all cyliders.
Using a timing light and a helping hand when operating the boat you should have steady spark on all cylinders no matter what speed your going.
If you remove the air intake you should be able to see the fuel going through each carburetor. If there is a carburetor problem you can verify it by squirting some fuel into the throat while running along. Keep in mind that fuel problems can very quickly blow powerheads. Don't run the engine for any longer than you have to to find the problem.
