I did it both ways, gravity helped but when you'd get the top out, the edges would pull and vice-versa. The best was going down 8 inches on each side, the weight kept it good enough like that.
I routered the tops of my stringers on my project as well. It was still a chore to get the 1708 to lay over a rounded 3/4 sheet.
Mind you in most places, my original stringers weren't capped and the deck just stapled to them. Anything is better than that.
When I make beer brats I toss it in the mix instead of boiling or the like. I've had issues with stronger alcohols not cooking out as nicely so you do have to play around with it. Used a lot of test patties for that recipie.

One thing I thought about... I have no capacity plate on the boat. Never had one as long as we had it. I'm going to have to reach out to get the exact specs and see if I can get one made.
One other thing noted I'd have to check... the 4.3 pushrod slots look like they could get pretty tight if I increase the ratio.... Might need to clearance them a tad if I end up using the 1.6 rockers....

True. But poultry can be weird mainly due to more questionable handling during slaughter and processing when compared to say beef. Though you can get chicken sashimi... I'd pray they handle it right though and I'd never try it.
