If it falls on a Wednesday and it is on one of my two smallish lakes with deep coves and arms and is supposed to rain all day, maybe.

I didn't want to restore this 1997 Islander this summer

Definitely watch the below link and just make sure the engine area is well supported with bunks. I'm not the expert but I think the engine areas need almost complete support or you hook the hull, leading to issues. https://forums.iboats.com/threads/weight-distribution-101.683625/

You are glad you had the demo mostly all done. Now you can build up how you want. I'll follow thread but I'm not a fiberglass guy. Lots of them here and I'm sure they will join in.

helm wiring, should be simple, i'm not too bright.

Fun little story. Prepping to put the last section of flooring in. Triple checked all plumbing / fuel clamps, steering cable up out of the way, etc. Thought I'd check all the helm buttons one last time and nothing worked. CHECKED THREE TIMES!!! The next 45 seconds of pure terror...

Correct. I think I've tried in the past with just an egg turner, this time I used my bench scraper. Thought about using my 6inch taping knife.
