Approx 30* total advance is normal
Every 1 mph increase above max hull speed takes a lot of hp

ok, are issues are did you get a true 6.2 ecm, note they were 555
Has the distributor been timed correctly
The diacom will help a bunch to see what is going on
A 1 inch dowel rod may close but it's not within spec (note tolerances)
If coupler is warped you can rotate the engine 90* and there will be a difference in direction
You need a true alignment bar
Its a one way valve which allows fumes to be pulled out of fuel pump housing, and stops any back fire going other way. If fuel pump tank gets full of fuel it will suck out the excess instead of letting it maybe leak out
I took what FunTimes mentioned is that your motor "might" limit. Merc has a in-gear switch and limits rpm when not in gear
Reading thru your posting I didn't see anything about actually having a miss under load. Have you had the boat out prior and did it miss?

The miss your hearing is still on the trailer and not under load, correct?

There is a fuel restriction, the antisiphon valve, collapsed fuel line or tank pickup tube
The antisiphon valve is on top the tank. Remove the fuel line then the valve. There is a spring and check ball inside
