Just replace the seals and use a good marine gear oil. you are overthinking it. gear oil temp will only be 1 or 2 degrees above the water temp while operating, and will be water temp when stationary. so if the water isnt frozen, the water in your leaking gearcase isnt frozen. a temp sender...

tilt trim suddenly stopped working- troubleshooting?

2 wire motors. Connect one to +, one to + and motor spins. Flip the wires and it spins opposite Putting + on blue would make it go up However sounds like your motor is dead or stuck Is no sparks, going to assume dirty or worn brushes

    Can’t get on plane

All carbs need to be properly set up. You would have been better off rebuilding your old carb than spending money on a used 35 year old carb with a questionable rebuild. Pull your plugs and get compression numbers. A fresh rebuild should be 150 psi +/- 5 across all 8 cylinders

    Can’t get on plane

Reving in neutral means nothing as the motor will go to redline with only two cylinders firing and the carb gummed up What are the compression numbers? Is the "new" carb a Mercruiser carb or Amazon purchase?
