I have yet to see a deck or pontoon style boat that I’d take out on the Chesapeake Bay on anything but the calmest days

Should have more than enough to crank a motor in decent condition.

You should be looking at an Echomap series 93XX or 94XX depending on location
The 93 series has “lake” maps the 94 series is tidal water.

Ideal flow is determined by the water temp, number, size and type of bait your maintaining. Some fish tolerate captivity very well, others do not.
Generally speaking, low flow is better than too much. To much flow and you literally can drown them.
I often venture far from sight of land, (offshore) often in total darkness.
I could resort to dead reckoning if need be, but pointless seeing I have two chartplotters onboard.
As far as the fish finder...shoaling is a constant problem in tidal water. Running aground isn’t an option.

I'm running two (2) deep cycle batteries with an ACR monitoring battery 1.
My criteria for connection is that all critical loads (required to get home) are assigned to the Battery 1

The 12” per rev retrieve rate is rather slow and they don’t come/have a line counter, but I don’t see why they wouldn’t work for you
