Realize that when you use an extension, the tongue load capability of the tow vehicle goes down. Extensions increase the torque (moment) applied to the hitch receiver and support structure of the vehicle.
On the zip tie anchors I would replace the adhesive tape with 3M VHB tape. I used them to anchor solar wiring on my trailer and the original adhesive failed, but the replacement VHB has been holding a long time.
The Sternsavers look like a good option for the transducer if you don’t have bottom...
The drive could have been on a twin engine boat where one drive rotates the other direction going forward. This is done with a left hand prop and the linkage set up like yours. All the single right hand prop SX drives I've seen (not that many) have the link on the left.
That vertical link is installed incorrectly for your right hand prop. Take it off and flip so it is installed in the other hole on the shift actuator. That will correct your forward = reverse issue.
Your power issues are due to something else. You should be able to get over 40 mph at wide...
There are multiple places it could be leaking. It's hard to tell from the pictures. It could be the upper gear case cover or the shift cover. You need to have the drive pressure tested to confirm where it's leaking.
Here's a good link for a part breakdown. Select Stern Drive from the...

There are two bellows, the upper U-joint bellows and the lower exhaust bellows. A tear in the U-joint bellows will kill your U-joints and gimbal bearing, which is the noise you hear. Not familiar with that specific drive, but you likely...
The black plastic plate aft of the pivot point pops off and reveals mounting screws. The forward screw is accessed by moving the shifter to reverse I recall.
I have the same engines on my Commander 30 and one runs 10 degF hotter than the other one. First confirm the difference with an IR gun, per above. When were the heat exchangers last cleaned? If you don't know, then get that done. Swap the thermostats between engines to see if the problem...
