keeping twice as much fuel on board than you plan on using is a good way of handling it ,but if it is stored around the water the damp air it breathes in and out as temperature changes will cause condensate to collect in the mostly empty tank and contaminate the fuel.
Have you thought about getting a smaller tank? I run a 6 gal tank and fish anywhere from 2 to 5 times a week as weather allows running about the same miles as you on a trip. I end up burning more fuel in my truck just to get to the boat ramp than I do in the boat.
Being retired is not a bad thing as long as you can do what you want when you want.
