That's great and all to hear what a fantastic bbq chef you are, but this thread is about bbq RECIPES. So give it up! Here, I'll get you started: :)

ShaneCarroll's Spicy Rib "Cure for Skinny" Recipe

Ingredients:
2 jalapeno peppers

Ok fine, well, everyone makes the BBQ sauce to their liking, or you can start with a pre-made BBQ sauce (I ain't giving up my recipe, waiting for the patent;)). Dice two jalapenos, save seeds and all, combine with the sauce, add cayenne pepper, don't be shy with it, I put some brown sugar in there as well, and for that extra kick, about a shot of tequila (Patron's my choice). Oh, this should be in about 12 ounces of sauce. Heat this on the stove or microwave for about 10 minutes, stirring occasionally to ensure equal taste throughout.

Now for the ribs, you want to marinate them preferably overnight in mojo criollo / water, 75 / 25 respectively, and add Adobo, seasoned salt, and pepper. Broil (covered) in the oven for about an hour on 200, flipping throughout the process. Now they are ready for the grill, let them cook for about 20 minutes, flip them and cover top side with sauce, repeat this process until they are done to your liking. I may have left a couple small details out, as I'm not in the kitchen looking at my spices, if so, I will be happy to update.

Now, the only downside to these ribs is, man you pay for those jalapenos later that night!!:eek: But it's worth it. .;)

Oh yeah, I forgot about the side, we call it potato mash:

Take a five pound bag of potatoes (skinned or not, your preference), dice them and boil them until cooked. Now, when you go to mash them, add butter, sour cream, a bag of shredded cheddar, and real bacon bits. Mix it all together, and it tastes great. I think all that butter and all the potatoes are what gets me so obese.

you forgot cream cheese.....throw a block in there, its awesome.....seriously.

Another great addition is garlic. My wife and I like garlic smashed potatoes-- cook up the taters any way you want-- boil, nuke, etc. Then take a whole head of garlic (maybe 2 for a five pound bag of potatoes), cut off the top, pour some olive oil on it. Microwave for around 2 minutes. Take out the cloves (they'll pop right out of their "sleeves") and smash them up with the potatoes. Add anything else you want (bacon bits sounds like a great idea).

...and for that extra kick, about a shot of tequila (Patron's my choice)....

Very interesting. I'm definitely trying this. Heh, one shot for the sauce...one shot for the chef...:D

I tend to take quite a few shots while cooking. Usually, I'm pretty "sauced" by the time I'm done making the sauce.:D Unfortunately, that's probably why I don't remember all the ingredients.:redface: I just start drinking, get hungry, grab a bunch of stuff from the spice cabinet, and combine it. Either it really is good, or by the time I eat it I don't care.
