What would be a good cleaner/soap to use on my PVC Zodiac for general cleaning?

Dishwasher paste applied with a wet towel like pad applicator, rinse well...

Dishwasher paste? Is that a paste you make up with dishwasher detergent and water or is it a paste product found in Peru?

For general claening use mild soap and water which is what most inflatable manufacturers recommends, this will not remove stains, when hard to remove stains are found, a dishwasher friendly hands paste grease remover is used with a small towel, pad applicator or even a very used 3M green Scotchbright wet pad applying light pressure in circular motion. The paste cleans much better than powder or liquid dishwahers if opting for cheap products, rather than that, you can find other convinient cleaning products at boat stores...
