An old farmer near me grows the best I've ever had every year, other greens also. I wash them well, cut the stems out and rough shred. I like to render some sliced, smoked hog jowls,hocks, etc., and add rough choped red onion,........... then add white wine, water or veg. broth, fresh garlic, a little soysauce, some cayenne or hotsauce, and wilt collards and cook them down a few hours,.................. I make big batches! Salt is optional as a little salted pork and soysauce give alot of salty flavor to a big pot! HAPPY NEW YEAR to everyone!! I like some pickled green cayenne pepper vinegar sprinkled on them too sometimes.
