Collard greens

Anyone else enjoying fresh, local, fantastic Collards this year? How do YOU cook them?

Oh heck yeah. Years ago my wife and I were on vacation in New York city when we decided to take a "Harlem Gospel Tour". That was great (and I highly recommend it), but afterwards we were taken to a place called "Londel's" for lunch. Everything was great, but I remember the greens were outstanding. (If, of course, one actually eats "greens". :rolleyes:)

We've got local collards.............in the back yard!


We like them boiled in water then drained with a few sliced pickels and a little sweet pickel juice on top. They are always better after a few fall frost and live all winter here NE of Atlanta.

Oh man,collards. I'm still plucking them from the ground here in central nc it has not been cold enough to kill 'em but that will change next week if temperatures drop to the teens. Boil and season with ham or fatback and serve with fried jalapeno corn bread. I like to make collard sandwiches and season with Texas Pete.
Tomorrow I will have collards,cornbread and black eyed peas and fatback for traditional New Year's eve. IMO prime rib takes a back seat to a meal like that. Country people do it good and do it simple and cheap but it can't be beat!

An old farmer near me grows the best I've ever had every year, other greens also. I wash them well, cut the stems out and rough shred. I like to render some sliced, smoked hog jowls,hocks, etc., and add rough choped red onion,........... then add white wine, water or veg. broth, fresh garlic, a little soysauce, some cayenne or hotsauce, and wilt collards and cook them down a few hours,.................. I make big batches! Salt is optional as a little salted pork and soysauce give alot of salty flavor to a big pot! HAPPY NEW YEAR to everyone!! I like some pickled green cayenne pepper vinegar sprinkled on them too sometimes.

OK got it now. Just googled some images. In England we would know it as a loose cabbage.

The wife fixed a big pot of black eyed peas cooked slow with a big ole ham bone in them. Also a big pot of collards seasoned with salt. pepper , ham, and a little chopped red pepper . Greens are best with a little balsamic vinagar and of course FRESH CORN BREAD.....shezammm I even gave the dog a bowl.

We always have collards cooked up and put away in the freezer. We slow cook them in broth with minced onion and garlic, and a heaping of smoked pulled pork from our local BBQ place. Add some seasonall to taste and when the pot liquor looks just right we portion it up and freeze it. We'll have some greens and blacked peas tonight for dinner with some grilled chicken on the Weber!!

We'd been buying our collards from a local guy but planted our own this year. Bought plants at a garden center and failed to save the tag, so I don't know what variety they are. They're really good so I'd like the same next season. Do yours make seed after the winter and if so, have you ever planted them?

I'm not a big fan of collards but I can do some damage to a big pot of turnip greens and roots with a big pone of corn bread.

I didn't cook them though - was over at someone's house for the holidays. Pretty typical southern holiday meal. We had the greens, yams, rice with black eyed peas, venison, rabbit and corn bread. I passed on the sweet tea and had water.

Not bad for a guy who was born in NYC, huh?

That's ok for starters but to be a valid candidate for southern there are chitlins,mountain oysters,poke salad,okra,fatback,field peas and lard & buttermilk biscuits. Not liking sweet tea could be a dis qualifier unless you substitute Mt.Dew!

no clue what collard greens are (i only eat things that had parents), but you guys are making me miss NC with the fatback talk. I used to travel to Rocky Mount NC for work, living a month at a time out of a hotel, and going home to NY for 2 weeks. Probably not an exaggeration to say I ate a half pound of fatback every morning.

That, and Chick-fil-a. They dont have those in New England...

Collard greens is the best!!! They's good for what ails you, and if nothin' ails you they's good for that too!
