What Temperature to Cook Fish?

I would have posted this in the Freshwater Fishing for but Lucky's (grocery store) had Chilean salmon for $1.99 per pound. So, I have always fried fish, but my wife who is much healthy decided we should bake it.

The cook books say 500 degrees for a whole salmon. Does anyone have an idea if that is correct? Does all fish cook at the temperature?

Does anyone have a recipe? We are going to put rosemary and lemon slices inside, but since I plan to catch more fish then $1.99 Chilean salmon, it wouldn't hurt to know another salmon or a healthy bass recipe.

Great price on the salmon...can't get it for that around here. Looks like you got "Lucky" Ha! :D
500 degrees seems like a very hot oven! Too hot and it dries salmon out.
There are a lot of Greeks around us ( Tarpon Springs, Fl.) and we got this recipe from one of the cooks at a local restaurant. Tastes great!

Salmon is an oily type, it lends itself to poaching in dry white wine or dry vermouth. Thats poach, not boil. ..filet it first.

Poach for 3 minutes, remove and boil the wine down,
finish with a splash of heavy cream or stir a blob of butter in, S&P.

Salmon is ok grilled too.

Whoever is roasting fish at 500 needs their oven calibrated.

I bake fish (generally) at 350. I also broil it and throw it on the grill (wrapped in foil).
I'm not a health nut, but I don't fry fish just because of taste. I prefer my fish with lemon, butter, maybe some wine and other spices & marinades rather than batter.

I have NEVER baked fish at 500 degrees! Usually 350 - 400. Too hot and too long and it will get dry and leathery. You want it moist and flaky.

Let's see ... have done the lemon and butter route.

Have done a light breading.

For a stronger fish I have done a light coating of cream cheese and then covered that with broccoli.

Have drizzled salsa, salt, and pepper over the top and baked it.

Have done a little butter, italian seasoning, and baked, or added some crushed tomato to it and baked.

Have made a paste of smashed, ultra ripe plantain, finely diced mango and finely chopped walnuts. Then sprinkled a little cornmeal over the top. All coatings are just to thinly cover. Bake till the coating is crispy and brown. Yum!

Use your imagination and creativity, there is no right or wrong way to do it. Enjoy. Oh, and all the above recipes were salted and peppered to taste.

It seems like 500 degree was high. It did come out. The skin was crispy, but because it was not fresh fish it was fishy. The 500 degree oven did give the kitchen that light aroma of over heated oil.
