I sliced up a Vidalia last week that was so sweet I went back to the store to get more but no joy. They were still great but that one onion was almost like eating candy and went very nicely with a chunk of Gorgonzola and tomato.
I can almost taste that pork butt Aspeck.
What kinda of wood chips did you use?

How long you rest?
Not very ... from midnight till 3:30AM. Oh, you mean the meat ... it hasn't rested yet ... still cooking. It will rest about an hour before I shred it and mix in a little of the smoke juice and maple syrup.

A combination of hickory and cherry woods. We are sitting at 190* currently ... another couple hours and it should be time to pull it out of the smoke.

I do ... smoked meats with maple seasoning are yummy! Adding maple syrup makes a great marinade also. I use a lot of ground coffee in my rubs also.

I had a big bowl of pasta salad around 9 am and at that point was functioning. The 2 hours of sleep thursday into friday then having to work in the morning did me in. I still haven't caught back up from it. But hungover I was not oddly enough.

I did have a couple bites of it to test it out (as did the wife ... you know, quality control) ... used a little sriracha on it with the salt, pepper, garlic, maple syrup ... a hint of bite with the sweet and char ... it was good. I quickly sealed it up and put it away so I didn't get to it before Sunday. It is a busy evening and tomorrow to get to Sunday, so I get through this afternoon and I am good with it till Sunday ... It was/is moist, tender, and yummy!

Gotta have quality control. Thats like skipping a pre run checklist. You could, but why. Just make sure. :LOL:

My daughter used to date a guy from VT.
The maple syrup replaced the ketchup bottle at their house.
They would always talk about putting in their coffee which didn’t sound good to me but I was wrong.
