Since I discovered how well a quick read thermometer works I've been spreading the gospel and have been buying them extra and as people come thru my kitchen I give them away. As the op of this thread and ostensibly a decent cook yes the thumb thing is OK but to truly turn out perfection, whatever that is for you, each and every time consistently nothing beats a thermometer. Pro tip, do not stick from the top, stick thru the side of the meat to the center.

I have a thermopen that’s fantastic. Guys can chuckle at my life lines when I smoke but my stuff turns out just the way I want it every single time. Been at this a long time.

Listen, I am a man of science. I have no problem with the temp probes, meters etc. It's just in day to day life, cooking is one of the few things I still get to run by feel. It's a fun change of pace (for me anyway). I have all the tech (everyone buys it for me) but outside of say a prime rib... I find I don't go for them much.

No shade being thrown. If I came off that way I apologize.
