    Being that there are cracks several inches away for the Bolt, I too will assume that that Core has deteriorated. Or was crushed by an Overzealous Rigger with an Impact Gun, and the Glass has succumbed over time

    The USDA considers 165 the Minimum for Ground Beef, less than that is Unsafe. Myself, I go for minimum of 185, often higher.

    Cooking it to a Lower Temp, Longer, creates the Best Environment for Bacteria to Multiply like Gangbusters

    190 or higher, or I will not eat Poultry I have returned dozens of Roasted Chickens to Costco, as I have seen Pinkish Meat and or Red/Pink Spots in the Breast Meat 185 is the lowest I will go with Pork or Beef

    The Boat is a couple of Inches too far back, as those Bunks are unsupported Wood. I would than either cut the Bunks, or move them forward, until the End is directly above the Connection to the Trailer Frame. that is where I would have the Transom, located.     It will fit. The 78 likely is a Older Style, with a less streamlined shape. My 78 90 had the post 78 gearcase on it.

    Boat weighs about 310 lbs. Looks like what used to be called a car topper Is just shy of 14ft Is rated 40hp Max. 45kmh is about 28mph, which appear a bit slow for a 14ft with a 50, we used to get better than 30 with a crank rated 35hp on a 14 ft Rpms are low, but maybe the Tach is not set...

    If you want higher top end, ditch the 4 blade, and reprop with a 3 blade to attain the 4800rpm What condition is the Engine in Mechanically, as in what are the Compression Test Numbers?
