fuel tank pick up gasket material

You want to use Nitrile with hydrocarbons Limitations While EPDM is compatible with a wide range of chemicals, it offers no resistance to hydrocarbon fluids. Additionally, EPDM seals absorb oil and gas, making them a weak defense in oil and gas applications...

Blues Seas recommends 6 AWG for charging systems 60A or less to protect from overheating the ACR. https://d2pyqm2yd3fw2i.cloudfront.net/files/resources/instructions/990170140.pdf

    Adding another rectifier

The rectifier does not generate power, it simply converts the stator generated AC to usable DC power. Unless you increase the output of the stator, adding second rectifier buys you nothing except the possibly of over loading the charging system, frying it in the process If you want to charge...

VesselView data to Lowrance Elite FS 7

Not sure what VV on your phone has to do with it. The Lowrance would get VV data via a NMEA2000 connection. Is your back bone connected and powered to the Lowrance?

2016 Mercruiser 6.2 ECT - long beep every few minutes???

Pretty sure your chasing ghosts for the most part. Went through the manual. Looks like nothing fancy. Typical I/O. Basic voltage monitoring although chassis (ground) is floating. Makes you sensitive to ground issues. Has a 485 serial output. Wonder if that’s not feeding the display up front...

2016 Mercruiser 6.2 ECT - long beep every few minutes???

Never assume anything. The should be a ground cable/strap between all four batteries. I didn’t see any in your pictures. As it stands you have 3 different computers hooked up to 4 different ground teference /potentials

    Bunks with plastic on top

1/4” is probably not the best, but I don’t see why they wouldn’t work unless the backing and weave are rather large.

    Battery switch

“Both” is still 12 VDC. Batteries in parallel Yes, you charge both batteries on “Both” but keep in mind using “Both” in effect makes one big battery. One battery with 100% charge and one battery with 50% (technically dead) charge when combined makes both batteries 75%.

high voltage to just one battery but not the other (from alternator)

The wiring diagram shows the alternator output terminated on the starter and carried to the positive terminal via the (big red) starter cable Since you had nothing with the thin wire disconnected, one must assume the thin red wire Is the ignition (power) wire. Would have to dig up the...

Thermostat senders vs sensor (pics attached)

A "sender" is typically an open/close switch used for status....aka over temp light A "sensor" is typically a measuring device with an analog output of some scaling - aka water temp gauge

    Electrical Issues

Anything is possible but things typically "fry" as in don't work at all. The GPS thing is suspicious....... almost sounds like the polarity is reversed, has been reversed (hooked up backwards) and or back feeding power through ground from another failed component. Unless your have the...

    Electrical Issues

First thing I would do is to dig around in the area surrounding the batteries for a cable that didn't get reconnected. IF you put the boat on Battery 2, do the rest of the issues resolve themselves?
